Can You Make Fathead Dough Into Sub Rolls

There are few versions out there how to make keto low carb bread buns or rolls, but if you tried the fat head dough and made pizza out of it, you most definitely appreciate how delicious fat head pizza crust is. It is very popular and has been a life saver for low carbers everywhere, including my friend who has a 13 year old with Type 1 diabetes and who's a very picky eater.

The recipe is very easy to make and these gluten free low carb buns require only 5 simple ingredients. For the topping I used sesame seeds and Trader Joe's Everything but the Bagel Seasoning, however you can use your favorite bread seasoning or topping of your choice.

Best Low Carb Keto Bread buns or rolls made from Fathead dough

Ingredients for Keto Low carb bread buns:

1 and 1/2 cups shredded mozzarella cheese

3 TBS cream cheese

1 egg

1 tsp baking powder

Optional ingredients:

1 tsp spices like, dried oregano, basil, garlic powder

For topping:

Gluten Free and low carb Keto bread buns

DIRECTIONS:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper
  2. Microwave Mozzarella and cream cheese in a bowl until soft, about 40 seconds.
  3. Add egg, Almond flour, remaining ingredients and spices and stir and blend well using spatula into a dough ball.
  4. Optional – you can proceed right away but for best results – let the mixture cool or freeze it for 30 minutes or else the dough may be sticky
  5. Divide the dough into 6 parts. Form an even ball with each piece by rolling with your hands, then press gently with your fingers to make a circle shape on the lined baking sheet.
  6. Sprinkle "Everything but the bagel seasoning" or sesame seeds over the breads and gently press into the dough. Bake for 12-14 minutes, until the buns are firm and golden.
  7. Serve fresh out of the oven, sliced in half and top with your favorite meats, cheeses, burger or veggies.

Low Carb bread buns used as a sandwich

I enjoyed mine as a sandwich with honey sliced turkey, lettuce mayo and tomato – fresh out of the oven – DELICIOUS!

Recipe notes:

1. Leftovers (if any left) can be left at room temperature for 2-3 days or can be refrigerated for up to a week

2. Leftovers can be frozen as well – if freezing leftovers, slice the bun ahead of time. When ready to re-heat, place in toaster and toast for 1 minute.

3. If you have a nut allergy, you can substitute for Gluten free baking flour instead or Sunflower seed flour (meal) or CarbQuick baking mix

3a. I have also seen other people have baked these with protein powder, instead of Almond flour ( but I have not tried this myself)

4. If you don't have a microwave, melting ingredients on stove top will work too.

5. Try these keto low carb buns as a bagel option with cream cheese – works amazing!
